BBQ Ribs with Maple Glazed Butternut Squash

I’m so picky when it comes to people helping me in the kitchen, because I hate messes and I like things done my way. Yes, I am a control freak…

My family is visiting from Montreal. It’s always nice to have family around, especially my mom, because she is an extremely talented cook and baker. Many of the recipes that I use belong to her.ย My mom is flawless in the kitchen, and when we work together everything is done in half the time. ๐Ÿ™‚

One of my favorite types of meat are ribs. Especially the ones that are so tender they fall right off the bone. Freshness, tenderness and flavor are key to delicious tasting meat. I made up this BBQ Sauce using different ingredients I had in the house. The sauce was finger licking amazing!

Ingredients: Red wine vinegar, molasses, soy sauce, maple syrup, hot red pepper flakes, A1 Steak sauce, brown sugar, garlic, scallions, ginger, water and ribs.

Mix all the ingredients in a pan.

Marinate the ribs for at least one hour. Wrap the pan tightly with aluminum foil, and bake in a preheated 350 degrees oven for 2 1/2 hours. (I turn the oven off and leave the ribs in for about another hour)

Remove the ribs from the sauce. Skim the fat off the top of the sauce.

Pour about 2 cups of the sauce into a pan. Bring sauce to a boil and lower the heat to medium. Add in 1 tablespoon of cornstarch mixed with a little water. Do not put the cornstarch in the sauce if it’s not mixed with cold water first. It will clump. Cook the sauce until it forms into a thicker bubbly consistency.

Pour the sauce over the ribs and serve!

My mom made these insanely delicious butternut squash rounds. I literally could not stop eating them. Try to buy a squash that has a long neck because they have more flesh. Slice the squash about one inch thick.

In a bowl mix onion and chicken soup mix, maple syrup, oil, paprika, and parsley. Spoon the mixture on the top and bottom of each squash round.

Place on a baking sheet lined with parchment paper.

Bake uncovered for about an hour on a preheated 350 degree oven.

Plate and serve. ( They tasted just as good on the second day!)

BBQ RIBS

Ingredients

  • 2 tbsp red wine vinegar

  • 3 tbsp molasses

  • 1/2 cup soy sauce

  • 1 cup ketchup

  • 1/4 cup maple syrup

  • 1/2 tsp hot pepper flakes (optional)

  • 3/4 cups brown sugar

  • 2 tsp fresh grated ginger

  • 2ย garlicsย minced

  • 2 scallions chopped

  • 1/2 cup water

  • 4 pounds ribs

  • 1 tbsp cornstarch

Instructions

  1. Mix all the ingredients (except for the cornstarch) in a pan.

  2. Marinate the ribs for at least one hour.

  3. Wrap the pan tightly with aluminum foil, and bake in a preheated 350 degrees oven for 2 1/2 hours.

Maple Glazed Butternut Squash

Ingredients

  • 1 Butternut Squash

  • 1 tsp onion soup mix

  • 1/2 tsp chicken soup mix

  • 1/4 cup maple syrup

  • 1 tbsp canola oil

  • 1/2 tsp paprika

  • 1 tsp dry or fresh parsley

Instructions

  1. Preheat oven to 350 degrees.

  2. Slice the squash about one inch thick.

  3. In a bowl mix the onion and chicken soup mix, maple syrup, oil, paprika, and parsley.

  4. Spoon the mixture on the top and bottom of each squash round.

  5. Place on a baking sheet lined with parchment paper.

  6. Bake uncovered for about an hour.
